Banana-Nut Loaf
Ingredients
- 2 c all-purpose flour
- 2 tsp baking powder
- 34 tsp salt
- 14 tsp baking soda
- 12 c shortening
- 12 c sugar
- 2 eggs
- 1 tsp finely shredded orange peel
- 2 ripe bananas cut up
- 2 Tbsp milk
- 12 c chopped pecans or walnuts
Directions
- Lightly grease a 9 x 5-inch loaf pan set aside
- Stir flour baking powder salt and baking soda in a mixing bowl
- Stir thoroughly
- Cream sugar and shortening until light and fluffy Add eggs and orange peel beat well
- Mash banana in a bowl with a fork stir in milk
- Add flour mixture and banana mixture alternately to cream mixture
- Beat until smooth after each addition
- Fold in nuts
- Pour batter in prepared pan
- Bake in a 350 oven for 45 to 50 minutes
- Turn out and cool on a wire rack
