Banana-Nut Loaf

Ingredients

  • 2 c all-purpose flour
  • 2 tsp baking powder
  • 34 tsp salt
  • 14 tsp baking soda
  • 12 c shortening
  • 12 c sugar
  • 2 eggs
  • 1 tsp finely shredded orange peel
  • 2 ripe bananas cut up
  • 2 Tbsp milk
  • 12 c chopped pecans or walnuts

Directions

  1. Lightly grease a 9 x 5-inch loaf pan set aside
  2. Stir flour baking powder salt and baking soda in a mixing bowl
  3. Stir thoroughly
  4. Cream sugar and shortening until light and fluffy Add eggs and orange peel beat well
  5. Mash banana in a bowl with a fork stir in milk
  6. Add flour mixture and banana mixture alternately to cream mixture
  7. Beat until smooth after each addition
  8. Fold in nuts
  9. Pour batter in prepared pan
  10. Bake in a 350 oven for 45 to 50 minutes
  11. Turn out and cool on a wire rack
