Banana-Nut Muffins
Ingredients
- 1 stick margarine
- 1 c sugar
- 2 large eggs
- 2 large ripe bananas mashed
- 2 c all-purpose flour
- 1 tsp salt
- 1 tsp baking powder
- 1 tsp baking soda
- 1 c buttermilk
- 12 c chopped pecans
- 1 tsp vanilla
Directions
- Preheat oven to 400
- Grease a 12-cup muffin pan or use paper liners
- Beat together softened margarine and sugar at medium speed until light and fluffy
- Add eggs one at a time beating well after each addition
- Beat in bananas until smooth
- Mix together flour salt baking powder and soda
- Alternately stir in flour mixture and buttermilk into egg mixture until dry ingredients are just moistened
- Stir in nuts and vanilla do not overmix Fill cups 23 full
- Bake 15 to 18 minutes
