Banana-Nut Muffins

Ingredients

  • 1 stick margarine
  • 1 c sugar
  • 2 large eggs
  • 2 large ripe bananas mashed
  • 2 c all-purpose flour
  • 1 tsp salt
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 c buttermilk
  • 12 c chopped pecans
  • 1 tsp vanilla

Directions

  1. Preheat oven to 400
  2. Grease a 12-cup muffin pan or use paper liners
  3. Beat together softened margarine and sugar at medium speed until light and fluffy
  4. Add eggs one at a time beating well after each addition
  5. Beat in bananas until smooth
  6. Mix together flour salt baking powder and soda
  7. Alternately stir in flour mixture and buttermilk into egg mixture until dry ingredients are just moistened
  8. Stir in nuts and vanilla do not overmix Fill cups 23 full
  9. Bake 15 to 18 minutes
