Banana Bran Muffins
Ingredients
- 1 c all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 egg beaten
- 34 c low-fat milk
- 2 Tbsp diet margarine
- 6 packets sugar substitute
- 1 12 c bran cereal
- 12 c mashed bananas
- 1 Tbsp honey
Directions
- Preheat oven to 400
- Spray 12 muffin pan cups with nonstick cooking spray
- Mix first 3 ingredients
- In separate bowl blend egg milk margarine and sugar substitute
- Stir in bran cereal Let stand for 5 minutes
- Mix mashed banana with honey until well mixed
- Add to bran mixture
- Stir in flour mixture just until well blended do not overmix
- Fill muffin cups 23 full
- Bake for 18 to 20 minutes or until toothpick comes out clean
- Let stand for 2 to 3 minutes
- Remove to wire rack to cool
