Banana Coconut Bread
Ingredients
- 2 c flour
- 2 tsp baking soda
- 12 tsp salt
- 3 eggs
- 12 tsp lemon extract or lemon juice
- 14 c sour cream
- 1 c sugar
- 1 c finely chopped nuts
- 1 12 c sliced bananas
- 12 c shredded coconut
- 14 c butter
Directions
- Preheat oven to 325
- Into a large bowl sift together flour baking soda and salt set aside
- Put eggs butter lemon extract sour cream and sugar in blender and mix or mix by hand
- Pour egg mixture into flour mixture stirring thoroughly
- Fold in nuts bananas and coconut
- Pour batter into 2 lightly buttered 9 x 5 x 3-inch loaf pans
- Bake for 45 to 50 minutes
