Banana Corn Bread
Ingredients
- 1 14 c cornmeal
- 14 c wheat germ
- 14 c potato flour
- 12 c soy flour
- 2 eggs
- 12 c mashed banana
- 1 Tbsp or pkg yeast softened in 2 Tbsp warm water
- 12 c honey
- 2 Tbsp corn oil
Directions
- Place cornmeal wheat germ potato flour soy flour and softened
- yeast in a bowlIn another bowl beat the eggs and all other
- ingredients
- Add the dry ingredients to the moist mixture and mix well
- Place in prepared 9 x 5 x 2-inch bread pan and let rise about 1 hour
- Bake in a 325 oven for 40 to 50 minutes Yield
- 1 loaf
