Banana Nut Muffins

Ingredients

• 1 egg
• 13 c milk
• 12 c vegetable oil
• 2 c all-purpose flour
• 1 c mashed bananas
• 13 c sugar
• 14 c chopped pecans
• 3 tsp baking powder
• 1 tsp salt

Directions

1. Heat oven to 400
2. Grease bottoms only of 12 medium muffin cups
3. Beat egg stir in milk and oil
4. Stir in remaining ingredients all at once just until flour is moistened
5. Bake until golden brown about 20 minutes
6. Immediately remove from pan Makes about 1 dozen muffins
