Banana Oatmeal Bread
Ingredients
- 1 c chopped pecans
- 13 c uncooked oats
- 14 c buttermilk
- 12 c shortening
- 12 c sugar
- 2 eggs
- 3 ripe bananas mashed
- 2 c all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 12 tsp salt
Directions
- Combine oats and buttermilk and set aside
- Cream shortening and sugar until light and fluffy
- Add eggs one at a time beating well after each addition
- Stir in bananas and oat mixture
- Combine flour baking powder baking soda and salt Stir into batter
- Spoon batter into a greased 9 x 5 x 3-inch loaf pan
- Bake at 350 for 70 minutes
