Banana Pudding Cake

Ingredients

  • 1 to 2 small ripe bananas
  • 1 2 layer size pkg yellow cake mix
  • 1 4 serving size pkg banana or vanilla instant pudding
  • 4 eggs
  • 1 c water
  • 14 c oil
  • 12 c chopped nuts optional

Directions

  1. Slice bananas into large mixing bowl
  2. Beat until well mashed
  3. Add remaining ingredients
  4. Blend
  5. Beat at medium speed for 2 minutes
  6. Pour into 10-inch well-greased and floured tube or Bundt pan
  7. Bake at 350 for 60 to 70 minutes
  8. Cool in pan at least 15 minutes
  9. Remove from pan
  10. Finish cooling on rack Sprinkle with confectioners sugar if desired
  11. May be baked in 9 x 13-inch pan for 50 to 55 minutes
