Barbara SimonS Chicken With Cranberries
Ingredients
- 1 3 to 3 12 lb chicken or boneless breasts
- 1 c flour
- salt and pepper to taste
- 1 c peanut oil
- 1 16 oz can whole sweetened cranberries
- 14 c peeled and chopped yellow onions
- 34 c orange juice
- 14 tsp ground cinnamon
- 14 tsp ginger
Directions
- Cut up chicken pat dry with paper towels
- Mix flour with salt and pepper and dredge each piece of chicken
- Pan-fry in peanut oil just until brown turning once
- In the meantime mix remaining ingredients in a stainless steel saucepan and bring to a boil
- Pour this over the chicken and cover
- Cook slowly for 35 to 40 minutes or until chicken is very tender
