Barbecued Duck Breasts
Ingredients
- 4 boneless duck breasts split from 2 wild ducks
- 1 Tbsp baking soda
- 2 Tbsp coarse salt
- 12 cup bottled Italian dressing
- 1 Tbsp Worcestershire sauce
- juice of 1 lemon
- 14 tsp garlic powder
- 14 tsp ground cloves
- 1 or 2 slices bacon for each breast
Directions
- Dissolve soda and salt in bowl of water
- Soak duck breasts in this water 3 hours
- Remove pat dry and place in shallow pan Combine next 5 ingredients in plastic bag
- Add duck breasts close bag and marinate at least 1
- 12 hours or overnight in refrigerator
- Remove breasts form marinade
- Wrap each in bacon and secure with toothpicks
- Cook on grill for about 5 minutes on each side basting with marinade
- Serves 4
