Barbecued Duck Breasts

Ingredients

  • 4 boneless duck breasts split from 2 wild ducks
  • 1 Tbsp baking soda
  • 2 Tbsp coarse salt
  • 12 cup bottled Italian dressing
  • 1 Tbsp Worcestershire sauce
  • juice of 1 lemon
  • 14 tsp garlic powder
  • 14 tsp ground cloves
  • 1 or 2 slices bacon for each breast

Directions

  1. Dissolve soda and salt in bowl of water
  2. Soak duck breasts in this water 3 hours
  3. Remove pat dry and place in shallow pan Combine next 5 ingredients in plastic bag
  4. Add duck breasts close bag and marinate at least 1
  5. 12 hours or overnight in refrigerator
  6. Remove breasts form marinade
  7. Wrap each in bacon and secure with toothpicks
  8. Cook on grill for about 5 minutes on each side basting with marinade
  9. Serves 4
