Basic Crepes
Ingredients
- 2 eggs
- 12 c all-purpose flour
- 14 c milk
- 14 c water
- 1 Tbsp butter or margarine melted
- 1 tsp sugar
- 14 tsp salt
Directions
- In mixer bowl beat eggs lightly
- Add melted margarine or butter and mix
- Add remaining ingredients and beat until smooth Batter will be thin
- Pour scant 14 cup butter into lightly greased and heated 8-inch crepe pan or skillet
- Tilt pan to coat bottom evenly with batter
- Cook over medium heat until brown turn crepe to brown second side
- Cool pan slightly between crepes
- Spoon filling onto center of crepe and roll
