Basic Crepes

Ingredients

  • 2 eggs
  • 12 c all-purpose flour
  • 14 c milk
  • 14 c water
  • 1 Tbsp butter or margarine melted
  • 1 tsp sugar
  • 14 tsp salt

Directions

  1. In mixer bowl beat eggs lightly
  2. Add melted margarine or butter and mix
  3. Add remaining ingredients and beat until smooth Batter will be thin
  4. Pour scant 14 cup butter into lightly greased and heated 8-inch crepe pan or skillet
  5. Tilt pan to coat bottom evenly with batter
  6. Cook over medium heat until brown turn crepe to brown second side
  7. Cool pan slightly between crepes
  8. Spoon filling onto center of crepe and roll
