Basic Marinara Sauce

Ingredients

  • 13 c olive oil
  • 4 cloves garlic minced
  • 28 oz can whole plum tomatoes
  • 6 to 10 chopped fresh basil leaves or 1 Tbsp dried
  • 12 tsp oregano
  • 13 c minced Italian parsley
  • 1 tsp salt
  • 12 tsp crushed red pepper
  • 34 c dry white wine

Directions

  1. Heat olive oil in deep 12-inch skillet and saute garlic until tender but do not burn
  2. Cut tomatoes into small chunks and add to skillet Add basil oregano parsley salt and pepper and bring to a low boil for 3 minutes
  3. Add wine and cook on moderate heat for 15 minutes Remove from heat and let stand for 15 minutes Serve over 1 pound of pasta
