Basic Meringue How-To

Ingredients
- 3 egg whites
- 12 tsp vanilla
- 14 tsp cream of tartar
- 14 c plus 2 Tbsp sugar

- A copper bowl is excellent for beating egg whites
- The chemical reaction which occurs between copper and egg whites helps to stabilize mixture
- Cream of tartar should be omitted when beating egg whites in copper bowl
