Bay City Chicken And Rice Chowder

Ingredients

  • 4 chicken breasts 2 whole
  • 2 carrots diced
  • 2 ribs celery diced
  • 1 small onion diced
  • 1 can sliced mushrooms
  • 3 cloves garlic minced
  • 12 c bell peppers diced
  • 1 tsp salt
  • 14 c butter
  • 2 cans chicken stock
  • 1 can cream of chicken soup
  • 2 12 c cooked rice
  • 1 pt half and half
  • 12 tsp rosemary

Directions

  1. Prepare chicken
  2. Remove skin and bone
  3. Lightly brown chicken in butter
  4. Remove chicken from pan set aside
  5. Saute onions carrots celery pepper mushrooms and garlic
  6. Add chicken rosemary salt and chicken stock
  7. Simmer covered 1 hour
  8. Uncover and boil until liquid is not covering chicken but not gone Remove chicken and soup
  9. Whisk until smooth
  10. Add cooked rice and cut up chicken
  11. Heat until bubbling
  12. Stir in half and half Salt and pepper to taste
  13. Serves 8 to 12
