Bayou Gumbo
Ingredients
- 3 or 4 boned chicken breasts
- 3 Tbsp oil
- 1 onion sliced
- 1 zucchini sliced
- 1 10 oz pkg chopped okra
- 1 c chopped tomatoes
- 1 garlic clove minced
- 1 14 oz can chicken broth
- 1 c water
- 14 tsp red pepper
- salt and pepper to taste
- 1 c cooked rice
- 1 c Niblets corn drained
- 1 c pitted ripe olives
Directions
- Dredge chicken in flour 13 cup
- Brown in oil
- Remove Add onion zucchini and garlic and saute until tender
- Add tomatoes okra broth and water along with seasonings
- Allow to simmer for 20 to 30 minutes
- Add rice corn and chicken simmer over low heat for 10 to 15 minutes
- When ready to serve add olives and heat through
