Bee Cake

Ingredients
- 1 1/4 to 1 3/4 c. unsifted flour
- 2 Tbsp. sugar
- 1/4 tsp. salt
- 1 tsp. grated lemon peel
- 1 pkg. yeast
- 1/3 c. milk
- 1/4 c. water
- 2 Tbsp. margarine
- 1 egg
- coconut topping and vanilla cream filling
Directions
- In large bowl, mix 1/2 cup flour, sugar, salt, lemon peel and yeast.
- Combine milk, water and margarine in saucepan.
- Heat liquid (120° to 130°).
- Gradually add to dry mix.
- Beat 2 minutes on medium speed.
- Add egg and 1/2 cup flour.
- Beat high 2 minutes. Stir in more flour to make soft dough.
- Cover and rise in oven until double (30 minutes).
