Beef-Filled Squash
Ingredients
- 2 medium-large acorn squash
- 2 slices bacon diced
- 1 lb ground beef
- 14 c chopped onion
- 1 to 2 Tbsp milk
- 14 c crushed potato chips
- 12 tsp salt
- dash of black pepper
Directions
- Cut squash in half lengthwise remove seeds
- Bake cut side down in shallow pan at 350 for 45 minutes or until tender
- Fry diced bacon
- Add beef onion 12 teaspoon salt and dash of pepper
- Cook until beef is browned
- Pour off excess fat
- Remove squash from shells reserve shells
- In small mixing bowl whip squash with 12 teaspoon salt add milk as needed to make mixture fluffy
- Combine with beef mixture
- Return to squash shells
- Top with crushed potato chips
- Continue baking at 350 for 15 minutes
- Makes 4 servings
