Beef-Filled Squash

Beef-Filled Squash

Ingredients

  • 2 medium-large acorn squash
  • 2 slices bacon diced
  • 1 lb ground beef
  • 14 c chopped onion
  • 1 to 2 Tbsp milk
  • 14 c crushed potato chips
  • 12 tsp salt
  • dash of black pepper

Directions

  1. Cut squash in half lengthwise remove seeds
  2. Bake cut side down in shallow pan at 350 for 45 minutes or until tender
  3. Fry diced bacon
  4. Add beef onion 12 teaspoon salt and dash of pepper
  5. Cook until beef is browned
  6. Pour off excess fat
  7. Remove squash from shells reserve shells
  8. In small mixing bowl whip squash with 12 teaspoon salt add milk as needed to make mixture fluffy
  9. Combine with beef mixture
  10. Return to squash shells
  11. Top with crushed potato chips
  12. Continue baking at 350 for 15 minutes
  13. Makes 4 servings
