Beef-Rice Creole

Ingredients

  • 1 lb ground beef
  • 1 Tbsp flour
  • 2 tsp salt
  • 12 medium green pepper chopped
  • 2 tsp snipped parsley
  • 14 tsp pepper
  • 1 12 c water
  • 1 8 oz can whole tomatoes
  • 1 12 c uncooked instant rice

Directions

  1. Cook and stir ground beef in 10-inch skillet until light brown drain
  2. Sprinkle beef with flour and salt
  3. Stir in green pepper onion and parsley cook and stir over low heat until onion is tender about 5 minutes
  4. Stir water and tomatoes with liquid into beef mixture
  5. Break up tomatoes with fork
  6. Heat to boiling Reduce heat cover and let stand 5 minutes
  7. Yields 4 servings
