Beef And Potato Pie

Ingredients

  • 1 large onion
  • 2 cloves garlic
  • 1 12 Tbsp olive oil
  • 1 lb ground beef
  • 1 tsp thyme
  • salt and pepper
  • 16 oz whole tomatoes
  • 3 Tbsp bread crumbs
  • 1 tsp dried marjoram
  • 1 12 lb potatoes
  • 1 Tbsp chopped parsley
  • 1 Tbsp oil

Directions

  1. Heat oven to 450
  2. Oil a 2-quart casserole
  3. Chop onion and garlic
  4. Cook in oil the onion then garlic for 1 minute Crumble beef in pan
  5. Add salt pepper thyme and marjoram cook until browned
  6. Peel and thinly slice potatoes
  7. Drain and chop tomatoes
  8. Add tomatoes and bread crumbs to beef
  9. Arrange 12 potatoes on bottom of pan overlapping halfway up sides
  10. Pack beef into pan
  11. Cover with remaining potatoes
  12. Bake until browned for 30 to 35 minutes
  13. Serves 4
