Beef And Squash Casserole

Ingredients

  • 1 lb fresh yellow or zucchini squash sliced
  • 1 c onion chopped
  • 1 c green pepper chopped
  • 1 lb lean ground beef
  • 3 c cooked rice
  • 2 eggs beaten
  • 1 can condensed cream of chicken soup
  • 12 c sour cream
  • 1 tsp salt
  • 14 tsp pepper
  • 1 c cheese grated

Directions

  1. Cook squash and onion in salted water about 5 minutes
  2. Drain well
  3. Cook green pepper and meat until meat is no longer pink Stir in rice
  4. Blend eggs soup sour cream and seasonings stirring into meat mixture
  5. Fold in squash mixture
  6. Turn into a greased 11 12 X 7 12 X 1 12 baking dish
  7. Top with cheese Sprinkle with paprika if desired
  8. Bake at 350 for 20 minutes or until hot and bubbly
  9. Makes 8 servings
