Beef And Squash Casserole
Ingredients
- 1 lb fresh yellow or zucchini squash sliced
- 1 c onion chopped
- 1 c green pepper chopped
- 1 lb lean ground beef
- 3 c cooked rice
- 2 eggs beaten
- 1 can condensed cream of chicken soup
- 12 c sour cream
- 1 tsp salt
- 14 tsp pepper
- 1 c cheese grated
Directions
- Cook squash and onion in salted water about 5 minutes
- Drain well
- Cook green pepper and meat until meat is no longer pink Stir in rice
- Blend eggs soup sour cream and seasonings stirring into meat mixture
- Fold in squash mixture
- Turn into a greased 11 12 X 7 12 X 1 12 baking dish
- Top with cheese Sprinkle with paprika if desired
- Bake at 350 for 20 minutes or until hot and bubbly
- Makes 8 servings
