Beef Brisket Pot Roast
Ingredients
- 4 lb boneless fresh brisket beef
- 1 large onion coarsely chopped
- salt and black pepper
- all-purpose flour
- water
- vegetables of choice
Directions
- Heat large heavy pot
- Add meat
- Brown on all sides without oil
- Pour off any fat
- Sprinkle onion around meat
- Cover tightly
- Cook over low heat for 1 hour
- Remove from heat
- Keep covered and let meat cool to lukewarm
- When cool slice across grain for serving
- Return meat to pot
- Sprinkle with salt and pepper
- Cover and simmer 1 to 2 hours longer or until tender turning slices once
