Beef Brisket Pot Roast

Ingredients

  • 4 lb boneless fresh brisket beef
  • 1 large onion coarsely chopped
  • salt and black pepper
  • all-purpose flour
  • water
  • vegetables of choice

Directions

  1. Heat large heavy pot
  2. Add meat
  3. Brown on all sides without oil
  4. Pour off any fat
  5. Sprinkle onion around meat
  6. Cover tightly
  7. Cook over low heat for 1 hour
  8. Remove from heat
  9. Keep covered and let meat cool to lukewarm
  10. When cool slice across grain for serving
  11. Return meat to pot
  12. Sprinkle with salt and pepper
  13. Cover and simmer 1 to 2 hours longer or until tender turning slices once
