Beef GoulashMicrowave

Ingredients

  • 2 lb stew beef cut in 1-inch cubes
  • 3 or 4 tomatoes
  • 1 onion coarsely chopped
  • 1 tsp salt
  • 12 tsp freshly ground pepper
  • 1 c dairy sour cream

Directions

  1. Place beef in a 3-quart microwave casserole
  2. Peel tomatoes and remove cores
  3. Cut tomatoes in chunks
  4. Place in casserole with beef
  5. Add onion salt and pepper stir
  6. Cover and cook on Roast for 40 to 50 minutes or until beef is tender
  7. Stir twice during cooking time
  8. Stir sour cream into mixture and let stand covered for 5 minutes
