Beef Potato SoupLucyS Original

Ingredients
- leftover beef stew and broth
- 4 potatoes cubed
- 2 carrots chunked
- 1 onion chunked
- salt and pepper to taste
- 1 qt can tomatoes
- red pepper optional
- 1 qt water
- 12 3 oz pkg Oriental noodles beef flavor
- 1 can mixed vegetables
Directions
- Combine all ingredients in a Dutch oven kettle
- Bring to a boil
- Reduce heat and simmer until potatoes and carrots are tender then simmer some more
- Delicious served with corn bread
