Beef Ragout In Squash

Ingredients

  • 6 acorn squash
  • 3 lb beef round bottom roast
  • 12 c vegetable oil
  • 12 c cider vinegar
  • 1 12 c water
  • 34 c uncooked long grain rice
  • 1 Tbsp salt
  • 12 tsp pepper
  • 2 medium onions sliced
  • 12 stick butter or margarine melted

Directions

  1. Heat oven to 425
  2. Cut squash in half and remove seeds Place cut side down in shallow baking pan
  3. Pour in 1-inch water Bake uncovered 20 to 25 minutes
