Beef Roast And Gravy

Ingredients

  • 2 to 3 lb chuck or shoulder roast
  • salt and pepper
  • 1 large onion chopped
  • 2 Tbsp flour or cornstarch
  • 2 Tbsp butter
  • 2 c water

Directions

  1. Heat oven to 400
  2. Place roast in baking pan with 2-inch sides
  3. Season with pepper
  4. Bake in oven for 30 to 40 minutes or until center is slightly pink
  5. Meanwhile saute onion in butter Slice roast with electric knife into thin slices
  6. Remove from pan
  7. Add water to drippings
  8. Stir in cornstarch or flour to thicken
  9. Add salt and onion
  10. Return meat to pan and continue cooking until gravy is hot and thickened slightly
