Beef Stew Bake

Ingredients

  • 1 12 lb beef stew meat cut in 1-inch cubes
  • 2 Tbsp cooking oil
  • 1 10 12 oz can mushroom gravy
  • 1 c tomato juice
  • 12 c water
  • 12 envelope onion soup mix 14 c
  • 4 medium potatoes peeled and quartered 1 14 lb

Directions

  1. In a heavy skillet brown meat in hot oil
  2. Drain off excess fat
  3. Combine gravy tomato juice water and soup mix stir into meat
  4. Simmer covered 5 minutes
  5. Place potatoes in a 2-quart casserole
  6. Top with meat mixture
  7. Bake covered at 350 until meat and potatoes are tender 1 12 to 1 34 hours stirring once or twice during baking
  8. Makes 6 servings
