Beef Stew Bake

Ingredients
- 1 12 lb beef stew meat cut in 1-inch cubes
- 2 Tbsp cooking oil
- 1 10 12 oz can mushroom gravy
- 1 c tomato juice
- 12 c water
- 12 envelope onion soup mix 14 c
- 4 medium potatoes peeled and quartered 1 14 lb
Directions
- In a heavy skillet brown meat in hot oil
- Drain off excess fat
- Combine gravy tomato juice water and soup mix stir into meat
- Simmer covered 5 minutes
- Place potatoes in a 2-quart casserole
- Top with meat mixture
- Bake covered at 350 until meat and potatoes are tender 1 12 to 1 34 hours stirring once or twice during baking
- Makes 6 servings
