Beef Summer Sausage
Ingredients
- 5 lb ground beef
- 12 tsp onion powder
- 12 tsp garlic powder
- 1 14 tsp pepper
- 3 14 Tbsp Tender Quick
- 1 tsp celery seed
- 2 12 tsp mustard seed
- 1 to 2 Tbsp liquid smoke
- 1 c water
- 1 to 2 tsp whole peppercorns optional
Directions
- Crumble ground beef in a large bowl
- Mix the next 6 ingredients together and sprinkle over ground beef
- Mix water and liquid smoke together and pour over ground beef
- Add peppercorns and mix thoroughly best method is to use your hands
- Divide into 3 equal portions and shape into rolls
- Wrap in foil
- Refrigerate for 24 hours
