Beet Relish
Ingredients
- 4 lb beets cooked and peeled
- 4 large onions
- 3 large green peppers
- 1 Tbsp whole cloves
- 1 12 c sugar
- 1 12 c vinegar
Directions
- Grind the beets onions and green peppers
- Tie the cloves in a cheesecloth bag
- In a large kettle combine the vegetables clove bag sugar vinegar 12 cup water and 1 tablespoon salt Bring to a boil and then reduce heat
- Cover simmer 20 minutes stirring occasionally
- Remove clove bag
- Ladle into hot jars and adjust lids
- Put in boiling water bath for 15 minutes
