Beets - Spiced

Ingredients

• 6 fresh beets
• 1 c olive oil
• 14 c vinegar
• 12 tsp sugar
• 12 tsp salt
• 2 to 4 whole cloves
• 14 c thinly sliced onions
• 6 c water
• 1 Tbsp vinegar
• 1 tsp salt

Directions

1. Heat water 1 tablespoon vinegar and 1 teaspoon salt to boiling
2. Add beets
3. Cover and heat to boiling cook 30 minutes or until tender
4. Drain
5. Cut beets into slices
6. Mix olive oil 14 cup vinegar sugar 12 teaspoon salt cloves and onions
7. Pour over beets and marinate overnight
