BetsyS Italian Potato Souffle

Ingredients
- 3 lb potatoes cooked
- 2 eggs
- 12 c Parmesan cheese
- 1 tsp oregano
- 13 c sherry
- 8 oz Mozzarella cheese
- seasoned buttered bread crumbs
Directions
- Mash potatoes
- Add 2 beaten eggs Parmesan cheese and seasonings
- Layer with Mozzarella cheese
- Place in greased casserole dish
- Top with seasoned buttered bread crumbs
- Bake 30 minutes at 350
- Can be frozen
- Serves 6
