BillS Chicken Salad

Ingredients
- 1 frying chicken about 2 12 to 3 lb
- 1 c sweet pickle relish
- 1 12 c Miracle Whip or mayonnaise
- 2 large eggs hard-boiled and chopped
- 12 c fresh onion minced or finely chopped
- 14 c chopped celery
- 2 Tbsp dried parsley flakes
- 14 tsp black pepper
- 2 tsp salad style mustard
- 1 Tbsp Cavenders all-purpose Greek seasoning
- 14 c chicken broth
Directions
- Boil the chicken until completely tender about an hour Reserve about 14 cup of the broth
- Remove the chicken from the pot and allow to cool completely then skin bone and dice or chop very small
- Mix ingredients well in a bowl that can be sealed airtight
- Seal and refrigerate at least four hours for flavors to blend
