Ingredients

  • 6 egg yolks
  • 12 c cold water
  • 1 12 c sugar
  • 1 12 c flour
  • 1 tsp baking powder
  • 12 tsp vanilla extract
  • 12 tsp orange or lemon extract
  • 12 tsp salt
  • 6 egg whites
  • 34 tsp cream of tartar

Directions

  1. Sift flour 4 times
  2. Beat egg yolks until thick and creamy lemon colored
  3. Add water continue beating until very thick Gradually beat in sugar then extract
  4. Fold in flour a little at a time
  5. Beat egg whites until foamy
  6. Add cream of tartar and beat until they form moist glossy peaks
  7. Fold in egg yolk mixture
  8. Bake in angel food pan in slow oven at 325 for 1 hour Invert 15 minutes
  9. Use whatever size pan is needed for obstorte cake cheesecake etc
  10. Fill with apricot jam
  11. Top with cream filling
  12. Decorate with cake decorator
