Bisque Of Shrimp Anglaise
Ingredients
- 3 Tbsp butter
- 2 lb shrimp
- 14 c diced carrots
- 2 Tbsp chopped onion
- 2 sprigs parsley
- bay leaf small piece
- 18 tsp thyme
- 2 Tbsp flour
- 1 qt chicken stock or soup
- 1 tsp salt
- 14 tsp pepper
- 2 Tbsp rice
- 12 c cream
- 12 c white cooking wine optional
Directions
- Heat butter add cleaned shrimp shelled carrots onion parsley bay leaf and thyme
- Cover and simmer 10 minutes or until shrimp are pink
- Add flour stir until blended
- Add 1 cup stock salt and pepper
- Cover and simmer gently 10 minutes
- Press through sieve
