Bisque Of Shrimp Anglaise

Ingredients

  • 3 Tbsp butter
  • 2 lb shrimp
  • 14 c diced carrots
  • 2 Tbsp chopped onion
  • 2 sprigs parsley
  • bay leaf small piece
  • 18 tsp thyme
  • 2 Tbsp flour
  • 1 qt chicken stock or soup
  • 1 tsp salt
  • 14 tsp pepper
  • 2 Tbsp rice
  • 12 c cream
  • 12 c white cooking wine optional

Directions

  1. Heat butter add cleaned shrimp shelled carrots onion parsley bay leaf and thyme
  2. Cover and simmer 10 minutes or until shrimp are pink
  3. Add flour stir until blended
  4. Add 1 cup stock salt and pepper
  5. Cover and simmer gently 10 minutes
  6. Press through sieve
