Black-Eyed Pea Casserole

Ingredients

  • 1 lb ground beef
  • 2 15 to 16 oz cans black-eyed peas
  • 2 c cooked rice
  • 1 16 oz can tomatoes drained and cut up
  • 1 c grated cheese
  • 12 c minced onion
  • 1 Tbsp butter
  • salt and pepper

Directions

  1. Brown beef drain
  2. Mix in other ingredients in the order listed
  3. Stir
  4. Pour into 13 x 9 x 2-inch pan
  5. Bake at 350 for 20 minutes
