Black-Eyed Peas And Spareribs

Ingredients

  • 1 small onion sliced
  • 1 clove garlic minced
  • 2 Tbsp oil
  • 1 lb spareribs cut into 3-inch pieces
  • 1 tsp paprika
  • 2 15 oz cans black-eyed peas drained
  • 1 c water
  • 12 c dry white wine
  • 1 16 oz can tomatoes
  • 12 c chopped green pepper
  • 2 Tbsp packed brown sugar
  • salt and pepper to taste
  • 2 tsp chili powder

Directions

  1. Saute onion and garlic in oil in 4 or 5-quart pot or skillet Add spareribs and brown
  2. Sprinkle with paprika add peas water and wine
  3. Cover and simmer 1 hour until ribs are tender
  4. Add tomatoes green pepper brown sugar chili powder salt and pepper
  5. Cover and cook slowly for 30 to 45 minutes
  6. Serves 4 Good over rice
