Black Bean Casserole
Ingredients
- 2 c black beans
- 8 oz yellow rice
- 2 or 3 tomatoes
- 12 oz Mozzarella cheese grated
- 1 can olives black
- 1 12 tsp ground cumin
- 1 tsp ground coriander
- 3 cloves crushed garlic
Directions
- Soak beans 4 to 8 hours then cook by bringing to a boil Simmer until done
- Cook rice by instructions on bag
- Cook beans with coriander cumin and garlic
- Place beans in a large casserole dish
- Add rice then chopped tomatoes with juice
- Add cheese and olives
- Bake at 350 for 30 minutes
