Black Bean Chili In 20 Minutes

Ingredients

  • 2 15 or 16 oz cans black beans drained
  • 1 14 12 oz can tomatoes chopped
  • 2 Tbsp olive oil or white wine
  • 1 medium onion chopped
  • 1 green pepper chopped in large pieces
  • 2 large garlic cloves minced
  • 2 Tbsp ground cumin
  • 2 Tbsp chili powder
  • 1 Tbsp brown sugar

Directions

  1. Saute onion in oil or wine
  2. Add green pepper garlic and cumin
  3. Stir in chili powder and saute
  4. Add beans and tomatoes Stir in brown sugar
  5. Cover simmer on low heat for 10 minutes Serve over couscous or brown rice
  6. Top with cheese over a baked potato
  7. Can be used as a dip with tortilla chips
