Black Bean Soup
Ingredients
- 1 12 c dried black beans
- 1 12 qt water or stock
- 2 Tbsp oil divided
- 1 carrot grated
- 1 onion chopped
- 1 potato grated
- 1 rib celery chopped
- 1 bay leaf
- 1 tsp oregano
- 14 tsp savory or thyme
- 2 tsp salt
- 18 tsp pepper
- 12 lemon sliced thin
- juice of 1 lemon
Directions
- Wash beans put in a large pot with the water or stock and 1 tablespoon oil
- Cover tightly and bring to a boil then reduce to a simmer for 2 12 hours or until beans are tender
