Blackberry Jam CakeYields 16 Servings

Ingredients

  • 1 c raisins
  • 1 c water
  • 1 c butter softened
  • 1 c packed brown sugar
  • 4 eggs
  • 1 tsp soda
  • 3 Tbsp buttermilk
  • 2 c all-purpose flour
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1 tsp allspice
  • 2 c blackberry jam
  • 1 c applesauce
  • 1 c chopped pecans

Directions

  1. Preheat oven to 350
  2. You will need three 9-inch round pans Bring raisins and water to a boil in saucepan
  3. Let stand until cool drain
  4. Cream butter and brown sugar in mixer bowl until light and fluffy
  5. Blend in eggs
  6. Add mixture of soda and buttermilk mix well Add sifted flour and spices mix well
  7. Stir in jam applesauce raisins and pecans
  8. Pour into greased and floured cake pans
  9. Bake for 30 to 45 minutes or until cake tests done
  10. Remove to wire rack to cool
  11. Spread Caramel Frosting between layers and over top and side of cake
