Blackberry Jam Fruit Cake
Ingredients
- 1 c butter softened
- 2 c sugar
- 4 eggs separated beat egg whites stiff
- 2 c blackberry jam seedless
- 3 c all-purpose flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 1 tsp ground allspice
- 1 tsp ground cloves
- 1 tsp ground nutmeg
- 1 c buttermilk
- 1 12 c chopped pecans
- 1 12 c raisins
- 1 12 c dates
- 1 12 c maraschino cherries chopped
- 1 tsp vanilla
- 1 c mixed candied fruit mix
Directions
- Cream the sugar and butter in a mixing bowl
- Add egg yolks and beat well
- Stir in vanilla milk and jam
- Add all dry ingredients and beat with mixer
- Add fruit and nuts
- Fold in the stiffly beaten egg whites
- Makes 3 layers
- Bake at 350 for 25 to 30 minutes then cover with foil
- Bake 30 more minutes
