Blackberry Jam Fruit Cake

Ingredients

  • 1 c butter softened
  • 2 c sugar
  • 4 eggs separated beat egg whites stiff
  • 2 c blackberry jam seedless
  • 3 c all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1 tsp ground allspice
  • 1 tsp ground cloves
  • 1 tsp ground nutmeg
  • 1 c buttermilk
  • 1 12 c chopped pecans
  • 1 12 c raisins
  • 1 12 c dates
  • 1 12 c maraschino cherries chopped
  • 1 tsp vanilla
  • 1 c mixed candied fruit mix

Directions

  1. Cream the sugar and butter in a mixing bowl
  2. Add egg yolks and beat well
  3. Stir in vanilla milk and jam
  4. Add all dry ingredients and beat with mixer
  5. Add fruit and nuts
  6. Fold in the stiffly beaten egg whites
  7. Makes 3 layers
  8. Bake at 350 for 25 to 30 minutes then cover with foil
  9. Bake 30 more minutes
