Blackened Fish

Ingredients

  • 1 12 lb firm fleshed fillets
  • 14 c flour
  • 3 Tbsp butter
  • 3 Tbsp cooking oil
  • 1 Tbsp blackened fish seasoning
  • parsley sprigs

Directions

  1. Dust the fillets with flour
  2. Heat the butter and oil in large heavy pan over medium heat
  3. Add fillets and cook 3 minutes on one side turn and sprinkle seasonings evenly over the browned side
  4. Cook another 3 minutes and turn sprinkling this side with seasonings
  5. Turn the heat on high and sear each side for about 2 minutes
  6. Garnish with parsley and serve immediately
  7. Serves 4
