Blackfoot Potato Soup With Sausage
Ingredients
- 1 lb Sweet Link sausage
- 1 c celery sliced
- 12 c chopped onion
- 12 tsp dried leaf thyme
- 2 Tbsp flour
- 12 tsp salt
- 1 13 34 oz can chicken broth
- 12 c water
- 4 large Idaho potatoes pared and diced
- 1 c milk
- 1 10 oz pkg cut frozen green beans cooked or 2 c fresh green beans cooked
Directions
- Slice sausage into 14-inch thick brown over medium heat in Dutch oven or heavy kettle
- Remove sausage with slotted spoon and reserve
- Drain away excess fat
- Add celery onion thyme and salt
- Cook until onion is tender
- Stir in flour
- Cook 1 minute
