Blender Bearnaise

Ingredients

  • 14 c vinegar
  • 2 Tbsp tarragon
  • 3 egg yolks
  • 1 stick butter
  • pepper and salt

Directions

  1. Reduce vinegar together with tarragon until liquid is almost gone
  2. In a blender beat eggs and lemon juice until lemon colored In the same pan as the vinegar and tarragon melt the butter while hot
  3. Slowly pour into the egg mixture while the blender is running
  4. Add salt and pepper to taste
  5. Enjoy
