Bleu Cheese Dressing 1
Ingredients
- 2 eggs coddled for 1 minute
- 1 c olive oil approximately
- 12 tsp white pepper
- 1 tsp salt
- 1 Tbsp lemon juice
- 1 Tbsp tarragon vinegar or regular vinegar
- 6 oz veined cheese Blue Roquefort or Stilton
Directions
- Coddle eggs in simmering not boiling water for exactly 60 seconds
- Put eggs in blender and blend for a few seconds then slowly add half of the olive oil while blending
- Add the remaining ingredients except for the rest of the oil and blend until the cheese is chunked to the size desired
- Slowly add the rest of the oil while blending
- If the dressing starts getting too thick stop adding the oil before the full cup is in
