Bleu Cheese Dressing 1

Ingredients

  • 2 eggs coddled for 1 minute
  • 1 c olive oil approximately
  • 12 tsp white pepper
  • 1 tsp salt
  • 1 Tbsp lemon juice
  • 1 Tbsp tarragon vinegar or regular vinegar
  • 6 oz veined cheese Blue Roquefort or Stilton

Directions

  1. Coddle eggs in simmering not boiling water for exactly 60 seconds
  2. Put eggs in blender and blend for a few seconds then slowly add half of the olive oil while blending
  3. Add the remaining ingredients except for the rest of the oil and blend until the cheese is chunked to the size desired
  4. Slowly add the rest of the oil while blending
  5. If the dressing starts getting too thick stop adding the oil before the full cup is in
