Blueberry-Almond Blintzes
Ingredients
- 4 eggs
- 1 c milk
- 14 c whole wheat flour
- 34 c white flour
- 1 Tbsp brown sugar
- 14 tsp almond extract
- 12 to 2 tsp butter
Directions
- Combine all ingredients except butter in a food processor or blender until smooth
- Heat an 8-inch crepe pan or skillet over medium heat
- Coat pan with about 12 teaspoon of butter
- Add 3 to 4 tablespoons of batter to the butter tilting pan to make an even layer of batter
- Cook on one side only
- When bottom begins to brown turn out to cool on a plate
- Repeat process with remaining batter
- Makes 18
