Blueberry-Almond Blintzes

Ingredients

  • 4 eggs
  • 1 c milk
  • 14 c whole wheat flour
  • 34 c white flour
  • 1 Tbsp brown sugar
  • 14 tsp almond extract
  • 12 to 2 tsp butter

Directions

  1. Combine all ingredients except butter in a food processor or blender until smooth
  2. Heat an 8-inch crepe pan or skillet over medium heat
  3. Coat pan with about 12 teaspoon of butter
  4. Add 3 to 4 tablespoons of batter to the butter tilting pan to make an even layer of batter
  5. Cook on one side only
  6. When bottom begins to brown turn out to cool on a plate
  7. Repeat process with remaining batter
  8. Makes 18
