Blueberry Cream Cheese Muffins
Ingredients
- 4 oz cream cheese
- 1 Tbsp lemon juice
- 2 tsp vanilla
- 2 eggs
- 12 c milk
- 4 Tbsp melted butter
- 2 c cake flour
- 34 c sugar
- 1 12 tsp baking powder
- 12 tsp baking soda
- pinch of salt
- 1 14 c blueberries
- 1 12 Tbsp sugar mixed with 1 tsp cinnamon
Directions
- Preheat oven to 350
- Fill muffin tin with cupcake liners In processor whip cream cheese lemon juice and vanilla until smooth
- Beat in eggs
- Add milk and butter and blend
- Combine next 5 ingredients and beat into cream cheese mixture until well blended
- Fold in blueberries
- Pour into muffin tins
- Fill 34 full
- Sprinkle tops with sugar and cinnamon mixture
- Bake 30 minutes
