Blueberry Cream Pie
Ingredients
- 4 c blueberries
- juice and grated rind of 1 lemon
- 2 Tbsp water
- 1 c sugar
- 4 Tbsp cornstarch
- 14 tsp salt
- 1 baked 9-inch pie shell
- 3 oz cream cheese
- 2 Tbsp cream
Directions
- Wash and drain berries
- Combine berries lemon juice rind and water
- Cover and bring to boil
- Simmer 5 minutes
- Mix sugar cornstarch and salt
- Add to blueberries
- Cook and stir until thickened
- Cook very slowly 10 minutes
- Cool
- Pour into cold baked pie shell
- Whip cream cheese and cream until fluffy Use to garnish pie
