Blueberry Cream Pie

Ingredients

  • 4 c blueberries
  • juice and grated rind of 1 lemon
  • 2 Tbsp water
  • 1 c sugar
  • 4 Tbsp cornstarch
  • 14 tsp salt
  • 1 baked 9-inch pie shell
  • 3 oz cream cheese
  • 2 Tbsp cream

Directions

  1. Wash and drain berries
  2. Combine berries lemon juice rind and water
  3. Cover and bring to boil
  4. Simmer 5 minutes
  5. Mix sugar cornstarch and salt
  6. Add to blueberries
  7. Cook and stir until thickened
  8. Cook very slowly 10 minutes
  9. Cool
  10. Pour into cold baked pie shell
  11. Whip cream cheese and cream until fluffy Use to garnish pie
