Blueberry Torte

Ingredients

  • 16 graham crackers
  • 12 c melted butter
  • 12 c sugar
  • 2 eggs beaten
  • 12 c sugar
  • 1 8 oz pkg cream cheese
  • large can blueberries in juice
  • 2 Tbsp cornstarch
  • 13 c sugar
  • 1 Tbsp lemon juice

Directions

  1. Mix first 3 ingredients and press into a 9 x 13-inch pan Combine eggs 12 cup sugar and cream cheese beat with mixer until smooth Pour over crust
  2. Bake 20 minutes at 375
  3. Drain blueberries reserving juice
  4. Cook juice cornstarch sugar and lemon juice until thickened
  5. Add blueberries and spread on top of baked torte
  6. Serve with whipped cream or topping
