Blueberry Torte
Ingredients
- 16 graham crackers
- 12 c melted butter
- 12 c sugar
- 2 eggs beaten
- 12 c sugar
- 1 8 oz pkg cream cheese
- large can blueberries in juice
- 2 Tbsp cornstarch
- 13 c sugar
- 1 Tbsp lemon juice
Directions
- Mix first 3 ingredients and press into a 9 x 13-inch pan Combine eggs 12 cup sugar and cream cheese beat with mixer until smooth Pour over crust
- Bake 20 minutes at 375
- Drain blueberries reserving juice
- Cook juice cornstarch sugar and lemon juice until thickened
- Add blueberries and spread on top of baked torte
- Serve with whipped cream or topping
