Boiled Tongue

Ingredients

  • fresh beef tongue
  • 1 12 c strained stewed tomatoes
  • 4 Tbsp Worcestershire sauce
  • 1 can mushrooms
  • salt and pepper
  • 14 c flour
  • 14 c butter

Directions

  1. Scrub tongue well
  2. Cover with boiling water and bring to a boil
  3. Skim cover and simmer until tender 3 to 4 hours
  4. Add 12 teaspoon salt per pound when partially cooked
  5. Remove skin when tender
  6. To 2 cups strained water in which tongue has been boiled add the rest of the ingredients
  7. Blend together to form sauce
  8. Place tongue in roasting pan pour over sauce
  9. Cover and bake 30 minutes at 350 turning often
