Boot Scootin Spinach

Ingredients

  • 2 pkg frozen leaf spinach
  • 1 jar medium Pace salsa
  • crumbled Feta cheese to taste
  • 1 c half and half
  • 2 Tbsp butter or margarine

Directions

  1. Precook spinach as directed on package
  2. Drain then add butter
  3. Add half and half and salsa
  4. Cook until bubbling hot in a large frying pan
  5. Add half and half as needed for consistency Add crumbled Feta cheese
  6. Let cook down to desired consistency not too soupy
  7. You may add a touch of garlic if desired
